INGRDEINTS : MeasurEments are with measuring cups and measuring spoons. 2 cups self raising flor or maida 2 cups sugar (I use 1 cup dark brown sugar and 1 cup regular sugar. If u dont have brown sugar use regular sugar) 1 1/2 cup vegetable oil 2 cups freshly grated carrot(Recommended Bigger carrots) 4 eggs (4 eggs are equal to 1 cup) 2 tsp vanilla essence 1 tsp nutmeg powder 1 tsp cinnamom powder 1 tsp baking soda 1 tsp baking powder 1 cup cahew nuts (i use cashew nuts because always they are available in kitchen, u can use walnuts also) Bundt pan is really good for this cake (The reason why i prefer bundt pan is cake batter will not over flow from this pan and when the cake is done u will get a beautifull shape}
This is a very delicious simple and easy carrot cake. Sieve dry ingeredeints all together in a bowl (flour, baking soda, baking powder)mix well. In a seperate bowl add nutmeg, cinnamom powder ,sugar, grated carrot, vegetable oil, vanilla essence and cashew nuts. Mix all the ingredeints peoperly and beat well by adding eggs and dry ingredeints untill incorporated. If u r using electric hand mixer keep it on speed 1 or 2. Dust baking pan with cooking spray or butter and flor then pour the mixture in to baking pan. Bake it on 325 degrees untill 40-50 min. For the muffins, spray muffin pan with cooking spray and lay muffin paper in muffin pan and transfer the batter in to muffin cup (when u r doing muffins fill the muffin cup half only. bake on 325 untill 30 min. While serving cake u can dust some powdered sugar or scoop a dallop of any flavoured icecream or top with whip cream, it is so delicious. I hope u all enjoy this receipie
